Rosa María García-Gimeno is currently working as an Professor in the field of Food Hygiene. Her research activities includes Safety Assessment of Foods, predictive food microbiology, Food Safety, Food Microbiology. She is a Member of Research group in Food Safety.

Dolores Corella, is a PhD in Pharmacy, Bachelor of Science and Food Technology and Professor of Preventive Medicine and Public Health in the Department of Preventive Medicine and Public Health, Food Science, Toxicology and Legal Medicine, University of Valencia. In the last ten years she has focused her research on the methodological development of so-called gene-environment interactions on various intermediate phenotypes and late cardiovascular diseases and obesity. In the study of interactions has specialized in studies on gene-diet interactions in different populations both Spanish and from other countries from different continents. She also participated in the PREDIMED (prevention with Mediterranean diet) study, working in recruitment and monitoring of patients at high cardiovascular risk as well as conducting genetic analysis and nutrigenomics studies of this cohort. She has directed more than 10 research projects of the National Plan and the Generalist Valencia and has collaborated in the development of more than 150 international publications in the field of cardiovascular diseases and obesity. Besides her research group has also participated in Red INBIOMED technology and is working with the COMBIOMED network.

Dirce Maria Lobo Marchioni persued degree in Nutrition from the University of São Paulo ( 1985) , Master of Public Health from the University of São Paulo ( 1999) , PhD in Public Health from the University of São Paulo ( 2005) , Oswaldo Cruz Foundation (2008 ) , Imperial College London (2013 ) and free teaching in Public Health from the University of São Paulo ( 2011) . She is currently Associate Professor at the University of São Paulo and has experience in the area of Nutrition, with emphasis on Food Consumption , acting on the following topics: food consumption , diet, dietary recommendations , food intake and case control.

Rafael Jordano Salinas is a Member of the Editorial Board of the Journal of Food Protection ( IAMFES , USA ) from 1999-2010 . He is an Expert participant in the review of the document FAO / WHO guidance to governments on the application of HACCP in small food businesses and / or less developed (FAO , Rome) in 2007 . His research work includes Implementation of alternative methods for the microbiological analysis of food : Petrify impedance ; PCR and Vida’s system and Improving the process of maturation of dried sausage : evaluation of starter cultures.

Jara Pérez-Jiménez holds a PhD in Food Science and Technology from the Autonomous University of Madrid (2007), after developing her PhD studies at the Department of Metabolism and Nutrition of the Institute of Food Science, Technology and Nutrition (ICTAN-CSIC), in Madrid. She later developed her activities at the Department of Nutrition of the Complutense University of Madrid; the Unit of Human Nutrition, INRA (Institute National de la Recherché Agronomique) in France; the Institute for Advanced Chemistry of Catalonia, IQAC-CSIC, in Barcelona; and she rejoined ICTAN-CSIC in 2012. Her research activity has focused on the study of different food bioactive compounds, especially polyphenols, through a multidisciplinary approach-analysis of content in foods, studies in animal models, clinical trials, observational studies and new on-line tools(www.phenol-explorer.eu). Overall, this has given place to 46papers published in international scientific journals(> 1,600 citations, h-index 21), as well as to more than 50works presented in scientific meetings and invited conferences in different universities (University of Glasgow, Complutense University of Madrid, Pablo de Olavide University in Seville, etc.). She is a member of the Editorial Board of Food Research International, where she recently coedited a special issue, as well as Academic Editor of PeerJ. Edite Teixeira de Lemos received her PhD. in Bio-medical Sciences from the Faculty of Medicine of the University of Coimbra; Portugal in 2008. At present she is a senior Professor at the Polytechnic Institute of Viseu and the director of post graduated course of Nutrition and Food Quality. More recently, she was elected chair of the Scientific Council of ESAV, Polytechnic Institute of Viseu. She also integrates the CI&DETS Research Center of the Polytechnic Institute of Viseu. She has co-authored over 60 papers, including review articles and textbook chapters. She is also a Reviewer/Co-reviewer of scientific papers in several international journals.

Vania Aparecida Leandro-Merhi is a Professor Doctor at the Pontifical Catholic University of Campinas-SP-Brazil in the area of clinical nutrition (School of Nutrition). Member of the tenured staff of the graduate program in health sciences. She is a Scientific editor of the Brazilian Journal of Nutrition and ad-hoc referee of many scientific journals. She develops research projects in the general area of clinical nutrition and with hospitalized adult and older adult patients and cancer patients. Her publication history includes studies on the nutritional status of hospitalized patients and clinical outcomes. She received her PhD in Medical Sciences (UNICAMP) and master’s degree in Sciences Applied in Pediatrics (UNIFESP).

Maira Bes Rastrollo born on August 12, 1978 in Gerona, Spain. Currently she is an Associate Professor of Preventive Medicine and Public Health at the University of Navarra, Spain and also serves as Deputy Chair of Dept. Preventive Medicine and Public Health at the same university. She completed her PhD. in Pharmacy at the University of Navarra in 2005 and was a research associate at Harvard School of Public Health, Dept. of Nutrition in 2006-2007. She also served as visiting scholar at Loma Linda University (California), Dept. of Nutrition in 2009, a member of the EASO Preventive and Public Health Task Force, a member of the editorial board of alternatives therapies in health and medicine and Tobacco Use Insights. She is an author of more than 112 papers in peer reviewed journals and several chapters in preventive medicine and nutrition textbooks and principal investigator of 8 projects funded by the Spanish National and Regional Funding Agency, and nutrition foundations. Maira holds a position of researcher leader in the SUN project (a Spanish prospective cohort with more than 22,300 participants) and researcher of the multicentre randomized intervention PREDIMED and PREDIMED-PLUS Studies and the Spanish working group on obesity and nutrition (CIBERobn). Apart from all these, she is a European expert for the FP7 call (contract CT-EX2006C134477-102) and Group leader for the area of Nutrition and Lifestyles in the group of Epidemiology and Public Health of the IDISNA (Navarra Institute for Health Research).

Androniki Naska is a graduate of the School of Sciences of the University of Athens (BSc in Chemistry); the School of Health and Life Sciences, King’s College, University of London (MSc in Human Nutrition); and the University of Athens Medical School (PhD in Nutritional Epidemiology, with distinction). Currently, A. Naska is Associate Professor of Hygiene and Epidemiology at the University of Athens Medical School. A. Naska has been core investigator in eleven and senior member of the coordinating team in thirteen EU-supported research projects on nutrition monitoring; eating out; the development and testing of dietary assessment methods; the collection and analysis of dietary and related data. A. Naska is also involved in the analysis of data collected through the EPIC study (prospective cohort study). A. Naska has published 122 original research papers and reviews, and 6 chapters in nutrition-related books (2,692 citations and h-index = 29).

Prof. Marcos got her PhD at the School of Pharmacy at the Complutense University in Madrid, Spain (UCM) in 1982 and Master in Clinical Analysis by UCM in 1986 and got a grant at the Spanish National Research Council (CSIC) and she was the Head of the Institute of Nutrition and Food Technology at the Mixed Center CSIC-UCM (1998-2002). She is the leader of the Immunonutrition Research Group at the Department of Metabolism and Nutrition at CSIC since 1987. She has achieved the highest category at CSIC as a Research Professor in 2006 and her scientific consolidation has been recognized for 5 six-year terms since 1985. She is a pioneer in the field of Immunonutrition in Spain, Founder and President of the International Forum of Immunonutrition for Education and Research (i-FINER) since 2007. She has been participating in 83 research projects (66 as a leader) and 473 publications. Since 1999 Prof. Marcos has been coordinating several multi-centre Spanish projects related to adolescent nutrition, eating disorders and obesity, funded by the Foundation for Health Research (FIS), Institute of Health Carlos III, Ministry of Health and Consumption as well as the Ministry of Education and Science or the Ministry of Science and Innovation.
